Buttermilk Biscuit Recipe

Usually made with shortening, butter or margarine, this low fat recipe for buttermilk biscuits has been made with oil. Oil such as canola oil is lower in saturated fat (saturated fat is linked to heart disease). As a result, the calories and total fat per biscuit have been cut by half! This buttermilk biscuit recipe will be a favorite with everyone!


-  1 cup all purpose flour
-  1 tsp baking powder
-  dash baking soda
-  dash salt
-  1/3 cup reduced fat buttermilk
-  2 tbsp cooking oil (preferably canola oil)
-  Orange Spread (recipe below)


  1. In a medium bowl, combine flour, baking powder, baking soda and salt.
  2. In a small bowl, stir together the buttermilk and oil. Pour over the flour mixture. Stir until well mixed.
  3. On a lightly floured surface, knead dough gently for 10 to 12 strokes. Roll out or pat dough to ½ inch thickness. Cut with a 2-inch biscuit cutter, dipping cutter in flour between cuts. Transfer buttermilk biscuits to an ungreased baking sheet.
  4. Bake in a 450F oven for 10 to 12 minutes or until golden brown. Serve warm. Makes 8 biscuits.

Orange Spread
Not only is this a delicious spread, it is one of our favorite low calorie recipes!

  1. ½ of an 8 oz package of reduced fat cream cheese, softened
  2. 2 tbsp orange marmalade OR peach or apricot preserves
In a small bowl stir together the cream cheese and orange marmalade until smooth. Makes ½ cup.

50 calories, 3 g total fat (1g unsaturated fat), 11 mg cholesterol, 57 mg sodium, 4 g carbohydrate, 0 g fiber, 1 g protein
